Canberry Stuffing

This is my infamous Apple Cranberry Stuffing, part of my 7 recipe nut-free raw vegan recipe series! This stuffing recipe is superb! Anyone will enjoy this, it is full of flavour and has a nice mixture of crunchy celery and “bread-like” mushrooms. The apple and cranberry gives the stuffing a great fruity taste that enhances the recipe. This low fat nut-free recipe will disappear when you serve it at ThanksLIVING.

Serves: 1-2 people Yields: 13+ cups

Prep Time: 30-60 minutes

Appliances needed:

  • Blender
  • Food Processor
  • Dehydrator (optional)

Dehydrating Time: 4-6 hours at 115° F, optional. Other non-dehydrator warming methods in video

Stuffing Ingredients:

Base Ingredients:

  • 4-6 cups of  mushrooms, any type, 6 or so portabella work
  • 1-2 cups of zuchini, shredded (1-2 small-medium zucchini)
  • 1-2 cups of celery, diced
  • 1 cup of cauliflower
  • 1-2 cups of parsley, to taste
  • Optional: 1-3 cups of apple and or cranberries, dried or fresh, to taste

Sauce Ingredients:

  • 1 young coconut plus some coconut water to blend
  • 2-3 tbsp of dried mango
  • 2-3 tbsp of sundried tomato
  • 1 tbsp of celery salt
  • 1 tsp of thyme, to taste
  • 1 tsp of sage, to taste
  • 1 tsp of black pepper
  • 1 tsp of poultry spice, to taste
  • Optional: 1 clove of garlic

Directions:

  1. In a food processor pulse the mushrooms (do small batches, don’t over-process) set in a large  mixing bowl
  2. Shred and then pulse the zucchini in the food processor (do small batches to prevent over-processing), put with mushrooms in mixing bowl
  3. Pulse carrots, cauliflower put into mixing bowl
  4. Chop parsley, put into mixing bowl
  5. If using fresh cranberries, put in food processor, otherwise just add the dried ones
  6. chop and or dice celery, onion and apple to desired size – about 1/4 – 3/8 cube
  7. Blend the remaining ingredients, mix with other ingredients.
  8. Dehydrate to warm up as an option
