- 2-3 cucumbers, chopped
- 1-2 cups of beet, shredded
- 1 avocado
- 1 lemon, juiced
- 1 cup of dill, diced
- Chop the cucumber, shred the beets, and dice the dill. Additional items could be added such as red onion, etc.
- The avocado can be cubed and the lemon juiced, and then stirred into the salad or you can make an avocado mash and stir it into the salad.
