I never ate too many sloppy joes as a kid, maybe because I was so sloppy! These warm and savoury sloppy Jons will surely hit the spot! But be warned they are sloppy! Wear white at your own risk!

Prep Time: 45-60 minutes
Appliances Needed:
- Food processor
- Blender
- Dehydrator (optional)
Ingredients:
- 4 portabello mushroom
- 4-6 medium tomatoes
- 1-2 medium carrots
- 1/2 of a small onion
- 1/2 of a green bell pepper or some optional jalapeno pepper
- 1/2 cup of sundried tomatoes
- 1/4 cup of dates/raisins
- 1 tbsp of cumin
- 1/2 of a small onion
Directions:
- First start by scooping the mushrooms out with a spoon to hollow them out; save for later.
- Next dice the onion, peppers, and tomatoes; put the tops of the tomatoes into the blender.
- Add some sundried tomatoes to the blender and blend. (I usually blend it a bit and let it sit to use the tomato juices to soak the tomatoes).
- When done blending add the sauce, which should be thick, to the chopped ingredients.
- Process in the food processor the sundried tomato, date/raisins, and cumin. Once mixed well add shredded carrots. (depending on your food processor you may need to pre-shred or if like my food processor you can use an S-blade and shredding attachment at the same time).
- Once the carrot and sundried tomato mixture is to your liking, add the scooped out mushroom and process further.
- Add this mixture to the chopped ingredients and stir.
- Lastly add the filling to the mushrooms, and as an option dehydrate for a few hours at 115 degrees Fahrenheit.
