Sloppy Jon

I never ate too many sloppy joes as a kid, maybe because I was so sloppy! These warm and savoury sloppy Jons will surely hit the spot! But be warned they are sloppy! Wear white at your own risk!

Prep Time: 45-60 minutes

Appliances Needed:

  • Food processor
  • Blender
  • Dehydrator (optional)

Ingredients:

  • 4 portabello mushroom
  • 4-6 medium tomatoes
  • 1-2 medium carrots
  • 1/2 of a small onion
  • 1/2 of a green bell pepper or some optional jalapeno pepper
  • 1/2 cup of sundried tomatoes
  • 1/4 cup of dates/raisins
  • 1 tbsp of cumin
  • 1/2 of a small onion

Directions:

  1. First start by scooping the mushrooms out with a spoon to hollow them out; save for later.
  2. Next dice the onion, peppers, and tomatoes; put the tops of the tomatoes into the blender.
  3. Add some sundried tomatoes to the blender and blend. (I usually blend it a bit and let it sit to use the tomato juices to soak the tomatoes).
  4. When done blending add the sauce, which should be thick, to the chopped ingredients.
  5. Process in the food processor the sundried tomato, date/raisins, and cumin. Once mixed well add shredded carrots. (depending on your food processor you may need to pre-shred or if like my food processor you can use an S-blade and shredding attachment at the same time).
  6. Once the carrot and sundried tomato mixture is to your liking, add the scooped out mushroom and process further.
  7. Add this mixture to the chopped ingredients and stir.
  8. Lastly add the filling to the mushrooms, and as an option dehydrate for a few hours at 115 degrees Fahrenheit.
