This is a simple dressing that is great during the winter when citrus fruits are at their best. This dressing will yield approximately 2.5 cups of dressing.

Serves: 1-2 people Yields: 2.5 cups of dressing

Ingredients:

  • 1/2 of an avocado
  • 2 cups of fresh squeezed orange juice (6 oranges should yield this)

Directions:

  1. Juice the oranges
  2. Blend orange juice with the avocado
  3. additional ingredients such as cauliflower, bell pepper, herbs, etc could be pulsed in at the end
