When I get my hands on some good quality tomatoes I want to use them in a simple way that allows me to taste them and not have too many other flavours all at once. The tomatoes don’t have to be heirloom, but good quality ones are important!

Prep Time: 10-15 minutes
- 6+ tomatoes
- your favorite fresh herbs, finely chopped (I like basil but others can be added too)
- Optional: dried celery salt can be added for extra saltyness
- Slice the tomatoes.
- Chop the herbs and sprinkle on the tomatoes.
- An extra option is to dehydrate the plate of tomatoes for a few hours and then dive in.
